
This variation on the standard banana bread recipe includes oat bran — more protein, vitamins, and heart-healthy soluble fiber — but no one has to know!

Oat bran contains the same fiber, vitamins and minerals, and protein as oats. You can use it to healthy-up some of your favorite baked breads and snacks. It can also be used 1:1 in place of bread crumbs in toppings.
Ingredients
2 eggs
2 overripe bananas, mashed
1/3 cup applesauce
2/3 cup sugar or Sucanat
1 1/2 cups whole-grain flour
1/4 cup oat bran
2 1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup chopped walnuts
Directions
Heat oven to 350 degrees. Cream eggs and bananas. Add applesauce and sugar, beat.
Sift together flour, bran, baking powder, and salt. Add to creamed mixture and beat. Mix in nuts.
Pour into greased bread pan. Bake 50 minutes or until done. Cool before slicing.
